This is an easy recipe for some delicious sandwiches this summer. While it can technically be made any time of year, Mid-June through October when those delicious garden tomatoes are ripe is best.
1 Microwave bacon cooker (see my personal recommendation in notes below)
Ingredients
2slicessandwich bread
2 slicesreal bacon
2slicesgarden fresh tomatoes
1dollopreal mayo
1pieceiceberg lettuce
salt and pepper
Instructions
Begin cooking your bacon in the microwave safe container, or on the stove top
Toast your bread slices at a medium setting or to your liking
Slice your garden fresh tomatoes and wash your lettuce
Once bacon is crisp and toast is done, it's time to build your sandwich
Spread mayo on one or both slices of bread, depending on your preference
Add to thinly sliced tomatoes on top of mayo
Salt and pepper directly on tomatoes slices (important)
Break apart bacon into shorter pieces, and lay across tomatoes to cover them
Add lettuce on top of bacon followed by top bread slice
Give a firm press down to solidify sandwich then cut in half and serve!

If you got some nice juicy garden tomatoes as needed and followed these instructions, you will end up with a delicious BLT that drips savory tomato juice down your chin as you eat. It's the only time of year I will eat BLTs because the taste of winter tomatoes and summer tomatoes is like night and day. vine tomatoesAs far as cooking bacon goes, yes it probably will always taste a bit better on the stovetop. I cooked it that way for a long time. However, cooking it in the microwave is so much easier, faster, and has less clean up. Not to mention it's actually still very good and when on a sandwich you honestly won't even know the difference. Anyhow... I purchased this microwave bacon cooker on Amazon about 5-6 years ago and have been using it for cooking bacon ever since.
